Bran Muffins

I know, I know, bran muffins. Who wants to eat a bran muffin when you can have blueberry or chocolate or cinnamon strudel? Once you've had these, you will always choose bran. I got this recipe from my mom many moons ago and have done my darnedest to share the yumminess that is a bran muffin to everyone I know. I even have long distance friends who request I make a batch whenever we plan to see each other (you know who you are).

These are great for breakfast, after school snacks or whatever. I love either making them fresh or at least microwaving them so that I can melt butter on them. So delicious!
  • 1 cup 100% bran cereal (Fiber One)
  • 1 cup boiling water
  • 1 1/4 cup sugar
  • 1/2 cup vegetable oil
  • 2 1/2 cups flour
  • 2 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups Kellogg's All Bran cereal
  • 2 cups low fat milk
Mix water and 100% bran in a small bowl and set aside. Meanwhile, mix sugar and oil. Add flour, soda, and salt to sugar and oil. Add milk. Fold in both bran cereals. Keep in tightly covered container for 2-3 weeks in refrigerator. Bake at 400 degrees for 17-20 minutes in greased muffin tin, or until a toothpick comes out clean.

NOTES: ALWAYS make the mix the night before you want to eat them. I have skipped this step before and you end up with crunchy muffins because the cereal doesn't have time to absorb all the juices in the mix. No bueno.

If I can help it, I make the muffins fresh when I want them. I'll bake 3-6 at a time for breakfast and a snack. Sometimes I just don't have the time so I'll bake half the mix at a time and then just microwave them when I want to eat them. You can eat them cold, I know people who do, but they are soooooo much better with melted butter (only takes about 15 seconds on medium power in the microwave).
