Raspberry Lemonade Popscicles

Who doesn't like a nice summertime treat? Growing up we always had Popsicles in the freezer for a quick snack in the middle of the day. They were easy to find in the freezer, portable, and very little mess.

While this recipe wasn't difficult to make, we all agree that it wasn't very tasty. First problem was that I couldn't find "raspberry lemonade" yogurt anywhere. I found plain raspberry up the wazoo, but not raspberry lemonade. So from the start my Popsicles weren't what they were supposed to be. Even with all the added fruit, there really wasn't much taste at all. After their failure in the taste department, we thought maybe I could have used regular lemonade concentrate or mixed some of the powdered stuff in with the yogurt but really didn't care enough about the recipe to try another batch. I'd rather experiment with fake Jamba Juice recipes I found on Pinterest. :-)

Check out the recipe below and if anyone has time to tweak it a bit to make it better, I'd love to hear about the results. Homemade Popsicles would be a nice thing to have in my recipe arsenal.
  • 1 container (6 oz) Yoplait Light Fat Free raspberry lemonade yogurt
  • 1/2 cup frozen raspberries
  • 6 paper cups (5 oz size)
  • 2 containers (6 oz each) Yoplait Light Fat Free very vanilla yogurt
  • 6 flat wooden sticks with round ends
In a blender, pulse raspberry lemonade yogurt and frozen raspberries. Cover, blend on medium speed until smooth. Divide raspberry mixture evenly among paper cups. Top with vanilla yogurt. Place cups in freezer about 20 minutes or until partially frozen. Insert 1 stick in each cup. Freeze 1 1/2 to 2 hours longer or until completely frozen. To eat, peel off paper cups.
