Pasta Salad

Pretty much everyone has their own version of the summer pasta salad and everyone swears theirs is the best. Well here is my recipe and I swear mine is the best (I can say that because it's not my recipe!). I got this recipe from my friend Morgan after it was served at a church shower of some sort. It is now a go-to recipe during the summer and simple as all get-out to make.
  • 1 package tri-colored, corkscrew pasta
  • olives, sliced
  • red onions, chopped
  • mozzarella cheese, shredded
  • Parmesan cheese, shredded
  • salami, sliced
  • Bernstein's Cheese Fantastico salad dressing
Boil the pasta until cooked. Drain water and let cool. Add remaining ingredients as you see fit and toss to combine.

NOTES: There are not too many directions that go along with this recipe so that you can make it your own. I usually use green olives, but I'm sure some people would prefer black. I use about half a bottle of the dressing, but sometimes more. Morgan also adds Feta cheese to hers but Feta is not my thing.

Bernstein's Cheese Fantastico is a great dressing just for salads too (tastes like the Olive Garden dressing). I would recommend making this dish at least the night before you want to serve it. That way the dressing can soak into the pasta a little. And I always bring the dressing along with me in case it needs a little pick-me-up.
