Texas Taco Joes

This is easily one of our family's favorite dinners. We absolutely love this wonderful invention called Texas Toast. For those of you who are unfamiliar with such deliciousness: it's pre-made garlic bread. Yeah, I know, doesn't sound like anything special but it's the perfect blend of soft and crunchy with just the right amount of garlic (stop drooling, Carolyn!). You can find boxes of them in the freezer section of your grocery store.

The appeal of this recipe: not only is it easy and quick to make, it has a variety of veggies to keep it healthy (remember what I said about hiding my veggies with my regular food? This works out great). We've made this a couple times now and people always ask for seconds. It's also a good one to teach Tyler that everything is not as it seems when it comes to food. When he so politely asked me if I needed help in the kitchen the other day, I asked him to hand me the peppers from the refrigerator. As he hands them over he says, "We're having peppers tonight? But peppers are spicy!" This gave me the opportunity to explain that not all peppers are spicy, just like not all olives are sour and not all cereal is the same... He thankfully was much more open to eating the peppers in our meal after that. It also helps that I chopped them so small he couldn't pick them out either. :-)
  • 1 lb extra lean ground beef
  • 1 onion, finely chopped
  • 1/2 cup finely chopped green peppers
  • 2 cans (14.5 oz each) no salt added diced tomatoes, undrained
  • 1 pkg (1 1/4 oz) taco seasoning mix
  • 4 slices Texas toast sandwich bread
  • 1 cup frozen corn
  • 1 cup Mexican style shredded four cheese blend
  • 1/4 cup chopped fresh cilantro
Brown meat with onions and peppers in a large non-stick skillet. Stir in tomatoes and taco seasoning, simmer on medium low heat 15 minutes or until slightly thickened, stirring occasionally. Meanwhile toast bread.

Add corn to meat mixture, cook and stir 3 minutes or till heated through.

Serve over toast slices topped with cheese and cilantro.
