I promised to find this recipe for you all and post it since most everyone at dinner loved it. As I said in my previous post, I'm not a bean person so this wasn't really my cup of tea. Not sure where Tyler found this recipe, but I think I see a small Betty Crocker logo in the corner. I'm sure there are plenty of variations to this recipe if you'd like to make up some of your own. Post them in the comments section and let me know how it goes. Here's the recipe!
- 1 pkg (20 oz) frozen julienne-cut sweet potato fries
- butter flavor cooking spray
- 1 can (15 oz) vegetarian chili with beans
- 1/2 cup (2 oz) shredded reduced fat sharp Cheddar cheese
- 4 (1/4 cup) medium green onions, sliced
Heat oven to 450 degrees. Arrange fries in a single layer on a 15x10x1 inch pan (we used a metal loaf pan). Spray fries with cooking spray. Bake 18-22 minutes or until crisp. In small saucepan, heat chili over medium heat or until thoroughly heated. Transfer fries to serving platter or individual plates. Spoon chili over fries; sprinkle with cheese and onions. Serve immediately.

Tried this tonight. I made it with fresh sweet potatoes instead of frozen fries. I also made it as a casserole by layering the chili and cheese on top of the sweet potato and baking it all for 20 minutes. I made cornbread muffins to have with it.
ReplyDeleteI really enjoyed it, but my Hubby and Mother-in-law did not like it all together. They said they would have rather had the sweet potatoes on the side or regular potatoes in the casserole.
I think it would be good with sour cream and green onion garnished on top after baking.
Tried this tonight. I really enjoyed it but hubby and mother-in-law didn't care for the sweet potatoes with the chili.
ReplyDeleteI used fresh sweet potatoes instead of store bought frozen, and made it into a casserole by layering the chili and cheese on top of the sweet potatoes. I didn't do the green onions on top because I didn't have any, but I think it would taste even more yummy with them and some sour cream after baking.
They said they would have liked the sweet potatoes on the side instead of in with the chili, or having regular potatoes layered instead.
I did make corn bread to go with it 😊
