Smoky Chicken Nachos

So have I told you my family improvises a lot in the kitchen? Yeah, it happens. Either I forget something at the store and we're running out of an ingredient, I can't find said ingredient while at the store and/or I'm too lazy to get myself to another grocery store to find it. Such was the case with this recipe. It calls for some "southwestern-seasoned chicken breast strips." Where does one find a south western flavored chicken? I looked in the chicken nugget section and the frozen chicken breast section at WinCo. Nothing really looked what they called for so what did we do? Improvise! I used Tyson's Bourbon flavored chicken nuggets. Wasn't too bad.

I also think it's hilarious that the recipe calls for 1 box "pasteurized prepared cheese product loaf." Doesn't that just sound gross? Just say Velveeta. We all know what you are talking about, but you feel you can't advertise for other companies, we get it. Anyway, just made me a little disgusted to know I was eating melted "cheese product loaf," at least until I started eating it and it was pretty good. So without further ado: 
  • 1 lb pasteurized prepared cheese product load, cut into 1 inch cubes
  • 1 cup chunky salsa
  • 1/4 cup BBQ sauce
  • 2 Tbsp chopped green onions (2 medium)
  • 2 packages (6 oz each) refrigerated cooked southwestern-seasoned chicken breast strips cut into bite-sized pieces
  • 10 oz tortilla chips (extra thick)
  • 3 plum (Roma) tomatoes, chopped (about 1 cup)
  • 3 cups shredded cheese
  • 1/2 cup sour cream
  • 3 cups shredded lettuce
In a 2 1/2 quart microwaveable bowl, microwave cheese, salsa and BBQ sauce on high 6 to 9 minutes, stirring every 3 minutes, until cheese is melted. Stir in onions. Spoon cheese mixture into a small slow cooker, set on low heat setting to keep warm (we used our fondue pot). Heat chicken as directed on package. To serve, have guests place chips on individual plates, spoon cheese mixture over chips and top with warm chicken, tomatoes, lettuce and sour cream.
