I got this recipe from my mom, though I'm not sure where she got it from. We tried it out and it makes for a nice, healthy-ish, simple dinner, though we wouldn't be rushing to make it again. We liked it, but we wouldn't call it a favorite. Maybe we needed more salt and pepper?
- 1 tsp olive oil
- 2 large cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 3 cans (5.5 cups) vegetable broth
- 2 tsp Italian seasoning mix
- 1 1/2 cups cheese tortellini (about 7 oz)
- 3 cups baby spinach, coarsely chopped
- parmesan cheese, shredded
- salt and pepper to taste
In a large saucepan, heat oil and cook garlic for about 1 minute. Stir in tomatoes, broth, and Italian seasoning. Bring to a boil. Add tortellini and bring back to a gentle boil.
Cook uncovered for 7-9 minutes, or until tortellini is tender. Stir in spinach. Spoon into bowls and top with Parmesan, salt, and pepper as desired.
