Can it technically be called "baked" if it's not actually put in the oven? And yes, I realize I now have at least 3 recipes for baked ziti here on the blog. What can I say? I like pasta! I like cheese! This was a really flavorful recipe and we will most definitely make it again.
- 1 Tbsp oil
- 1 lb lean ground beef
- 1/2 yellow onion, chopped
- 1 tsp garlic powder
- 2 tsp Italian seasoning
- 3/4 tsp salt
- black pepper to taste
- 2 Tbsp tomato paste
- 2 tsp balsamic vinegar
- 4 cups low sodium chicken broth
- 1 can (14.5 oz) diced tomatoes
- 16 oz dry ziti pasta
- 1 cup shredded cheese, preferably mozzarella and/or Parmesan
Set Instant Pot to sauté and add oil. Brown beef, then stir in the onion, garlic powder, Italian seasoning, salt, pepper, tomato paste, and balsamic vinegar. Cook for 30 seconds, stirring constantly.
Pour the beef broth into the pot, scraping any bits off the bottom of the inner pot (not doing this correctly will trigger the burn warning). Stir in the tomatoes and dry pasta.
Pressure cook for 3 minutes then quick release the pressure and open the pot. Stir in the cheese, cover with the lid and let sit for 3-5 minutes or until the cheese has melted. Serve immediately.
