Chicken Mozzarella

super glamorous looking recipe. Sorry!
Apparently you can make a lot with Bisquick aside from the usual biscuits and pancakes. In cleaning out some cabinets I found an entire cookbook of Bisquick recipes! And they aren't even mostly breakfast related. This thing is ooooollddd. Ok, I should re-phrase that since I just checked the copyright date and it's from 1983. :-/ Here we go: this copy of the cookbook is well-loved, by someone other than me because I have no idea how it ended up in my recipe book cupboard. :-)

  • 1 Tbsp vegetable oil
  • 2/3 cup Bisquick original baking mix
  • 2 Tbsp grated Parmesan cheese
  • 2 Tbsp Italian seasoning
  • 1 tsp paprika
  • 1/4 tsp pepper
  • 6 large chicken breast halves
  • 6 Tbsp chili sauce
  • 6 slices (3 1/2 - 4 inches each) mozzarella cheese
See....I told you it was really old!

Heat oven to 425 degrees. Put oil in a 13 x 9 x 2 inch pan. In a bowl, mix baking mix, Parmesan cheese, Italian seasoning, paprika, and pepper; coat chicken. Arrange skin sides down in pan. Bake uncovered, 45 minutes. Turn chicken; spoon 1 tablespoon chili sauce on each breast half. Top each with mozzarella cheese slice. Bake until cheese is melted, about 5 minutes longer. 

NOTES: The only note I had to myself after this recipe was to watch the sriracha. I'm not a spicy foods person and the amount called for in the recipe was a bit much on some pieces. Though Doug and Tyler really liked it.
