Taco Pinwheels

We made this as a main dish, not an appetizer. I had some ground beef lying around that needed to be made and we had most of the other ingredients ready to go. Super simple recipe, nothing fancy. Doesn't take long at all and very flavorful.
  • 4 oz cream cheese, softened
  • 3/4 cup seasoned Taco Meat
  • 1/4 cup finely shredded cheddar cheese
  • 1/4 cup salsa
  • 2 Tbsp mayonnaise
  • 2 Tbsp chopped black olives
  • 2 Tbsp finely chopped onion
  • 5 flour tortillas (8 inch), room temperature
  • 1/2 cup shredded lettuce
  • additional salsa
In a small bowl, beat the cream cheese until smooth. Stir in taco meat, cheese, salsa, mayonnaise, olives, and onion. Spread over the tortillas. Sprinkle with lettuce; roll up rightly. Wrap rolls in plastic and refrigerate for at least 1 hour. 

Unwrap and cut into 1 inch pieces. Serve with additional salsa.

Makes 3 dozen
