Bacon Cream Cheese Bombs


This recipe has pretty much everything I love to eat: tons of cheese, bread, and bacon. There's nothing crazy difficult about this recipe and it doesn't take long. It's pretty filling as an appetizer so we made these again and cut each biscuit in half. It was the perfect size. I will update the recipe below to reflect that. The biscuit dough is pretty filling by itself. Anyway, really good food. 
  • 1 can refrigerated biscuits
  • 8 oz cream cheese, softened
  • 8 oz bacon, cooked and crumbled
  • 1/4 cup green onion, chopped
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup cheddar cheese, grated
  • 1 tsp garlic powder
In a medium mixing bowl, mix together cream cheese, bacon, green onions, Parmesan cheese, and garlic powder. Open can of biscuits, separate, and cut each biscuit in half. Roll each piece flat, about twice its usual size.

Preheat oven to 350 degrees. Take about a tablespoon of cream cheese mixture and place it in the center of each biscuit. Pull edges of biscuit dough together to fold over the cheese and pinch edges to seal. 

Place filled biscuits on a greased cookie sheet. Sprinkle with cheddar. Bake for 11-13 minutes, or until golden brown.

NOTES: When I remade these, I wasn't as aggressive with the pinching of the biscuits to shut them. Most came open while baking, but they worked just fine still. Also, I forgot to sprinkle the cheddar cheese on most of them until they had been baking a bit. They're super tall and the cheese sort of fell off when I sprinkled it anyway. It's your call if you want to sprinkle and smoosh it down or do without the cheddar.
