S'mores Crispy Bars

Ooey gooey sticky goodness. These were really yummy. So yummy that I may, in fact, have made a plate for one of my co-workers to take to our Merced office and he "forgot" them for several days. Several days that he had to eat them all himself! I'm shaking my head at you, Kevin. Can't trust you with anything. 
  • 1 cup butter, divided, softened
  • 1 package (10.5 oz) miniature marshmallows
  • 6 cups Rice Krispies cereal
  • 1 3/4 cups crushed graham crackers, divided
  • 1 cup milk chocolate chips
  • 1 cup confectioner's sugar
  • 1 jar (7 oz) marshmallow cream
  • 2 milk chocolate candy bars (1.55 oz each)
In a 6 qt stock pot, melt 1/4 cup butter over medium heat. Add marshmallows; cook and stir until melted. Remove from heat. Stir in cereal and 1 1/2 cups crushed crackers. Fold in chocolate chips. Press into a greased 13 x 9 inch baking pan. Cool to room temperature. 

For frosting, in a small bowl, beat remaining butter and confectioner's sugar until smooth. Beat in marshmallow cream on low speed just until blended. Spread over bars. Sprinkle remaining crushed crackers over frosting. Cut into bars. Break each candy bar into 12 pieces; place a piece on each bar. 

NOTES: Remember that anything with marshmallows is going to be messy. Be prepared to work fast once they are melted so that it stays melted and doesn't make it back to the super tacky phase. And don't leave your dishes for days. I speak from experience. Even if you don't want to clean them right that second, at least put water in/on them to soak. 

Serves 2 dozen
