Lemon Bark

Super easy recipe and it looks pretty too. I really like lemon flavored things, this recipe only takes 2 ingredients, and I wanted something sweet. I couldn't ask for more in a dessert!
  • 2 packages (10 oz each) white baking chips
  • 1 cup crushed hard lemon candies, divided
Line a 15 x 10 x 1 inch pan with foil. In a double boiler, melt baking chips; stir until smooth. Stir in 2/3 cup crushed candies; spread into prepared pan. Sprinkle with remaining candies. Cool. Refrigerate until set, about 1 hour. Break into pieces.

NOTES: I don't own a double boiler. I do, however, have a lot of experience (both good and bad) with the microwave (learn from Tyler's mistake: don't forget the water when heating ramen in the microwave. The house, and microwave, will smell like burnt noodles for a looooooong time). Anyway, I poured a bag of the white baking chips into a bowl, followed the instructions on the back of the package for how to melt them, and voila! It worked. No double boiler needed. 

Crushing candies is a fun thing the kiddos can help you with. Even though Tyler is 13 now, he still likes any kitchen job I give him that involves smashing things. Again, I've learned from experience: use two ziplock bags when smashing things. The inside one will inevitably break or get torn and you will end up with sticky lemon candy all over your counter. I let Tyler go at it with a rolling pin. And we put a dish towel down to prevent more mess too. 

Makes 1 3/4 lbs
