
Only problem is the one I always have with candy coatings: it doesn't look pretty. You're working with a melted substance and trying to coat something that is frozen. Time is always working against you. You know what, who cares? They taste great no matter how funny they look!
- 36 Oreos (not double stuff)
- 1 (8 oz) pkg cream cheese, softened
- 1 tsp peppermint extract
- 16 oz white chocolate almond bark
- 1/4 cup crushed peppermint candies, for decorating
Set a sheet of wax paper over a cookie sheet and set aside. Place Oreos in a food processor and pulse until finely crushed. Pour crushed Oreos into a mixing bowl.
In a separate bowl, blend together cream cheese and peppermint extract. Add cream cheese mixture to crushed Oreos. Using the back of a spoon, stir mixture while pressing it along the bottom of the bowl, until well-combined and evenly moistened.
Scoop mixture out and form into 1-inch balls. Place on prepared cookie sheet. When all are made, put the cookie sheet into the freezer for 10 minutes.
Melt almond bark according to package instructions. Remove truffles from freezer and dip into melted bark using two forks and evenly coat. Place truffles back on cookie sheet and immediately sprinkle with peppermint candies while coating is wet. Store in an airtight container in the refrigerator.
NOTES: In case you're wondering, 36 Oreos is exactly how many cookies are in the Winco brand bag of Oreos. So don't bother counting them all. Just dump the whole thing in.
Also, don't heat all your almond bark at once. Do a little, coat some truffles, and then heat more as you need it. I got pieces of Oreo falling off in my bark and then it got cold and was re-solidifying, etc. You have a much higher chance of not burning your candy coating if you do it in batches.
