Classic Mojito

Some friends of ours have a mint tree in their backyard. They ended up with an overabundance of mint this past summer so what better to do with it than make mojitos! It's a pretty simple recipe. No crazy ingredients, no major skill needed. They turned out pretty well!
  • 2 oz light rum
  • soda water
  • 2 tsp sugar
  • 1 lime
  • 4 mint leaves
Muddle sugar and mint in a beer mug. Squeeze both halves of lime into the glass, leaving one hull in the mixture. Add rum, stir and fill with ice. Top with club soda. Garnish with a mint sprig. 

NOTES: the recipe doesn't say anything about "spanking" the mint leaves. If you really want the mint flavor to come out in the leaves, you need to smack it between the palms of your hands before muddling. You will taste and smell the difference. The "spanking" releases the oils.
Serves 1
