Chocolate Dipped Bacon

This is actually our second time making this recipe. Because, darn, we forgot to take a photo the first time and therefore just had to make it again. :-) It worked out well because I didn't get to try any the first time. I took them for our life group at church and they were all eaten by the time I got around to it.

Needless to say, these were amazing. The first time around, we did the white and semi-sweet chocolate chips. This time we stuck to simple and just did one chocolate, but they were still delicious. My fave was the one topped with toffee bits.
  • 12 thick-sliced bacon strips
  • 6 oz white candy coating, coarsely chopped
  • 6 oz semi-sweet chocolate chips
  • 1 Tbsp shortening
  • 12 12-inch wooden skewers, soaked in water
  • topping suggestions: cayenne pepper, toffee bits, coconut, chopped dried fruit, finely chopped nuts, sea salt, brown sugar
Preheat oven to 400 degrees. Thread bacon strips, weaving back and forth, onto the skewers. Place on a rack in a large baking pan. Bake until crisp, 20-25 minutes. Drain on paper towels and cool completely. 

In a microwave, melt candy coating; stir until smooth. Brush onto both sides of 6 bacon strips and sprinkle with toppings. Place on a waxed paper-lined baking sheet. 

In a microwave, melt chocolate chips and shortening; stir until smooth. Brush onto both sides of remaining bacon and top as desired. 

Refrigerate until set. Store in refrigerator.
