Double Chocolate Banana Chip Muffins

Fantastic! That's what these muffins are. Doug wasn't so sure about them when I made them for our Life Group at church, then he tried one of them. And then another. And tried to steal another....You get the idea. They were delicious. I wish they were a little prettier. When I first took them out of the oven, they were all nice and pretty. Then they fell as they cooled. Doesn't really matter. They still taste wonderful.
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/4 cup baking cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 1/3 cups mashed ripe bananas (about 3 medium)
  • 1/3 cup canola oil
  • 1 large egg
  • 1 cup (6 oz) miniature semisweet chocolate chips
Preheat oven to 350 degrees. Whisk together the first six ingredients. In a separate bowl, whisk bananas, oil and egg until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips. 

Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm. 

NOTES: there was an optional streusel topping that was included in this recipe. I'm not including it because there is nothing needed to make these muffins any better. They are amazing.
