Pico de Gallo

I never even thought of making my own pico de gallo before this. I made this to go with our Bacon Ranch Quesadilla recipe which I will post about next week. Both turned out amazing, I must say.

I like recipes you can customize as much as you need to. For example, we only used half a jalapeno in this because the quesadillas we made called for another jalapeno. We minimize the spicy in this house. There was a lot of onion so if you want more of a tomato taste, maybe do less onion, more tomato. We only had a red onion to work with, but I think classic pico de gallo has white onion. Ours still tasted great.
  • 5 Roma tomatoes, seeded and finely diced
  • 1/2 large red onion, finely diced
  • 1 jalapeno, seeded and finely chopped
  • 1/2 bunch of cilantro, finely chopped
  • 3 cloves garlic, minced
  • 1 Tbsp lime juice
  • salt and pepper to taste
Toss the tomatoes, onion, jalapeno, cilantro and garlic together. Add the lime juice and salt and pepper to taste. Store in fridge.
