As far as recipes go, this was pretty simple. It serves a lot of people and takes few ingredients. That said, it was a pretty blah recipe. Doug, Tyler and I all gave them a good college try, but no one wanted to keep the leftovers. They really just tasted like baked carrots. I didn't taste much of the ranch at all. See if you can doctor it up a bit and let me know how you did it.
- 4 Tbsp olive oil
- 32 oz baby carrots
- 1 oz ranch dressing mix

Preheat oven to 400 degrees. Add olive oil to a large ziplock bag. Add carrots, seal and shake the bag until all the carrots are coated with oil. Sprinkle ranch dressing mix into the bag, seal and shake again until carrots are evenly coated. Spray a baking sheet with cooking spray, spread carrots on baking sheet in a single layer. Cook for 30 minutes (or until carrots are soft), stirring halfway through.
