Chocolate, Strawberry & Cookie Parfait

Fat-free. Low-fat. Sugar-free. Not my favorite words in the world. I believe the fat and sugar are in the food for a reason: it tastes better! Needless to say I was a little leery of this recipe because of all the semi-healthy sounding ingredients, but I'm happy to report that it turned out pretty well. I think the pudding had a bit of what I will call, a "sugar-free aftertaste." But nothing that stopped me from eating more than one of this little babies.
  • 2 cups cold fat-free milk
  • 1 pkg (1.4oz) chocolate, fat free, sugar free instant pudding
  • 1 cup sliced fresh strawberries
  •  6 reduced fat chocolate sandwich cookies, coarsely chopped (about 2/3 cup)
  • 1/4 cup thawed cool whip
Beat pudding mix and milk in medium bowl with whisk for 2 minutes. Refrigerate 5 minutes. Spoon 1/3 of pudding mixture evenly into 4 mugs or parfait glasses; top with layers of 1/2 each of the berries and cookies. Repeat layers. Cover with remaining pudding mixture and cool whip.

NOTES: I'm an Oreo fan. Specifically a Double-Stuf Oreo fan. I would suggest increasing the amount of Oreos in this recipe a bit. I felt it was a bit stingy on the cookie layer.
