Taco Salad

This recipe is has been a favorite in the Martin household since before I was a Martin. Doug's mom used to make it for the family and I was lucky enough to get the recipe from her before she passed away. If I'm not mistaken, this recipe is based off a Kraft recipe for Catalina Taco Salad. Doug's mom tweaked it to her liking and the result is what's below. 

  • 1 lb ground beef, browned
  • chili seasoning mix
  • 3 Tsp chili powder
  • 1/2 tsp nutmeg
  • 1/2 tsp turmeric
  • 1 cup shredded cheddar
  • 1/2 can kidney beans (optional)
  • tobasco sauce (optional)
  • 1 cup broken Doritos Nacho Cheese chips or tortilla chips
  • 1 small tomato
  • 1 head iceberg lettuce
  • 1 small bottle Catalina dressing
Mix first 8 ingredients together and pour over washed/dried lettuce. Add tomato, chips and dressing to taste.

NOTES: What's so great about this recipe is that you can mix and match and make it how you like it. I didn't use tobasco sauce this time and picked around the beans that Doug insisted we have in it. We used Doritos this time, but I know we've used tortilla chips as well. Post your tweaks in the comments section and I'll give them a try next time.
