These were awesome. I was a little afraid that eating something that is usually grilled and on a bun would be weird to eat in muffin shape, but this is a really great idea. The actual eating part was a little messy, but that may be because I probably could have left them in the oven longer.
I got this recipe out of my Betty Crocker recipe calendar. Each month has a seasonal-ish recipe for the picture and I figured, why not? It was free! I'm excited to try the rest of them because they look just as good as this one.
- 1 lb lean (at least 80%) ground beef
- 1 large onion, chopped (1 cup)
- 1 Tbsp Worcestershire sauce
- 1 tsp garlic salt
- 1 cup shredded cheddar cheese (4oz)
- 1/2 cup milk
- 1/2 cup Original Bisquick mix
- 2 eggs
- garnishes

In a medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon a scant tablespoon of baking mixture into each muffin cup. Top with about 1/4 cup burger mixture. Spoon 1 tablespoon baking mixture onto burger mixture in each muffin cup.
Bake about 30 minutes or until toothpick inserted in center comes out clean, and muffin tops are golden brown. Cool 5 minutes. With thin knife, loosen sides of muffins from pan; remove from pan and place top size up on cooling rack. Cool 10 minutes longer and serve with garnishes.
Notes to recipe: Super easy prep and really tasty. Doug made a comment though, and I agree: prepare your meat however you like your hamburger flavored. Doug likes some seasoned salt or teriyaki on his burgers sometimes. The meat part was a little blah when made as instructed. Don't skimp on the batter or meat because you will need every last bit of it. If anything, I'd say add a little more batter than they say.
Also, unless you have a super hot oven, I would definitely keep them in for the full 30 minutes because I took mine out a little early and they were a bit mushy. I really wish there was a way to get the garnishes to stay better. I put a dollop of ketchup and mayo on mine, sprinkled it with shredded lettuce and added some chopped pickles. That's where the messy part comes in. There's got to be a better way to get all the good stuff to stay on top of the muffin.
