Rice Krispie Treats

So maybe I'm unamerican, but I don't think I'd ever made rice krispie treats from scratch until this. I've definitely enjoyed those made for me by other people but I'd never made them myself. My goal this time was to use some peppermint marshmallows I had. What I didn't know, when I made that goal, is that you should never use old marshmallows for baking. They just lose their goo. I couldn't get the marshmallows to properly melt to glue my krispies together and it became a bit of a mess. 

I also figured I'd try to use cocoa krispies and add a little peppermint extract instead of vanilla. Let's just say I need to make this recipe again, but properly. Until then, feel free to try this recipe yourself and let me know how it goes!

  • 6 Tbsp salted butter
  • 16 oz bag mini marshmallows, divided
  • 1 tsp pure vanilla extract
  • 6 cups rice krispies cereal
Line a 9-inch square baking dish with parchment paper. Set aside. 

In a large saucepan, melt butter over medium heat. Once melted, add in all but 1 cup of marshmallows. Reduce heat to low and continue stirring until completely melted. 

Remove from heat and stir in the vanilla. Add the cereal and the remaining 1 cup of marshmallows. Pour into the prepared baking dish. Press gently with your fingertips just until completely spread out. Allow to set, about an hour. Cut and enjoy.

Serves 9

Total Time: 5 minutes, plus setting
