Baked Potato Soup

This one was a bit disappointing. I mean, I like baked potatoes as much as the next person, maybe more. But this was just bland. I'm thinking it would have had more flavor if the garnish items (cheese, bacon, onion) were stirred in much earlier in the recipe. It would let their flavors permeate the food more. As it was, all we tasted was the garnish. Oh, and it was a very gritty texture. 

  • 2 medium potatoes, baked, cooled
  • 1 can (14.5 oz) chicken broth
  • 2 Tbsp sour cream
  • 1/8 tsp pepper
  • 1/4 cup shredded cheddar cheese
  • 1 Tbsp crumbled cooked bacon, or bacon bits
  • 1 green onion, sliced
Peel potatoes and cut into 1/2 inch cubes; place half in a blender. Add broth; cover and process until smooth. Pour into a saucepan. Stir in sour cream, pepper, and remaining potatoes. Cook over low heat until heated through (do not boil). Garnish with cheese, bacon, and onion. 

Serves 2

Total Time: 20 minutes plus baking the potatoes
