This recipe seemed a little odd at first. When we cooked it, it looked a bit weird, but man was it delicious! We will definitely be making this recipe again and again. So simple. Such easy ingredients to find.
- oil for frying
- 2 cups flour
- 2 tsp baking soda
- 1 tsp salt
- 1-2 cloves garlic, minced
- 1/2 cup Parmesan cheese, halved
- 3/4 - 1 cup cup milk
Combine the dry ingredients in a medium mixing bowl along with the minced garlic and half the cheese. Gradually stir in the milk until you have a nice dough that isn't too wet. Turn out on a lightly floured surface and knead for several minutes, until soft and pliable. Divide the dough into 8 equal pieces and press flat between your hands; until about pancake thickness.
Pour a little oil in a frying pan or griddle over medium meat. When the oil is shimmering, lay a couple pieces of dough on the pan at a time. Fry for about a minute, until golden brown, then flip and repeat on the other side. Move to a nearby plate when done and sprinkle with a little extra cheese.
NOTES: The original recipe called for 3/4 cup of milk but we had to add a little more to get the consistency right. I adjusted the recipe for that. This griddle bread poofs up when you cook it so don't worry if your dough looks a little sad when you're flattening it.
