Latte Popcorn

I was told to move this one up in the list by my artistic director (aka the hubby, Doug). He said people would probably want to use this recipe at this time of year, as people sit down to watch holiday movies by the fire. So at his request, here it is!

  • 8 oz chopped white chocolate
  • 1/2 Tbsp instant espresso
  • 10 cups freshly popped popcorn
  • 1/2 cup chocolate covered espresso beans
  • 1 1/2 cups mini marshmallows

Microwave the white chocolate in a small microwavable bowl until melted, stirring every 15 seconds. Add the instant espresso and stir until incorporated. 

Place the popped popcorn, espresso beans, and marshmallows in a large mixing bowl. Pour melted espresso-chocolate over popcorn, tossing to coat. Spread popcorn on a baking sheet lined with parchment paper; let cool 15 minutes before serving. 

NOTES: My white chocolate wasn't behaving well for me so it didn't really drizzle over the chocolate like I thought it would. It was a bit thick and clumpy, but still worked out ok. I used white baking chips, so maybe that's why. It wasn't technically white chocolate. Either way, it made a bit of a mess as I was mixing all the ingredients together because it's hard to find a bowl large enough for 10 cups of popcorn. I ended up spreading mine out over a few lined baking sheets and drizzling/dropping/mixing it that way. Once the white chocolate was on it, I just used my hands to gently mix and fold all the ingredients together and let them sit. Then it got transferred to a bowl or two. People loved it!
