Shrimp Fajitas with Jalapeno Ranch

I love making recipes that are fairly simple, but really flavorful. I like to feel as if I'm getting restaurant food, but from my own kitchen. This recipe was very easy to make, had great taste and we definitely didn't have any leftovers!  

  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 4 Tbsp lime juice, separated
  • 1 Tbsp Cajun spice
  • 1/2 tsp salt
  • 1 lb large shrimp, peeled, deveined 
  • 2 bell peppers (any color)
  • 1/2 medium red onion
  • 1/4 cup cilantro, chopped
  • 8 small flour tortillas
  • jalapeno ranch
  • 1 avocado, sliced
  • 1 lime, cut into wedges
As I have been taught, warming 
tortillas is VERY important!
In a small bowl, combine marinade ingredients: olive oil, garlic, 1 Tbsp lime juice, Cajun spice, and salt. Slice bell peppers and onions to 1/3 inch thickness and place them in medium bowl. Pour half marinade over the top and toss to combine. In a second medium bowl, pat dry shrimp with a paper towel, add remaining half of marinade and stir to combine. 

Heat a large, heavy skillet over medium heat with 1/2 Tbsp oil and when hot, add shrimp in a single layer. Sauté 1-2 minutes per side, or until just cooked through and no longer translucent. Remove from pan and transfer to a plate. 

In the same pan, add marinated vegetables and sauté until soft and golden brown at the edges (10 minutes), stirring occasionally, then turn off the heat. 

Add shrimp back to the pan, along with cilantro. Add remaining 3 Tbsp lime juice to taste and toss to combine. Serve with warmed or toasted tortillas and jalapeno ranch sauce.
