Loaded Nacho Fries

This was a great recipe. Very filling, no crazy expensive or odd ingredients, you can modify it to your tastes as well. You can see our modifications in the notes section below. I've updated the original recipe to reflect most of our changes as well as include more specific amounts of ingredients. 
  • 2 lb bag frozen fries
  • 1 lb ground beef
  • 1 onion, diced
  • 2 bell peppers, chopped
  • taco seasoning packet
  • small can jalapenos, drained, optional
  • 1 1/2 cup cheddar cheese
  • 2 Roma tomatoes, diced
  • 1 bundle green onions, diced
Preheat oven to 375 degrees. Lay frozen fries on baking sheet and cook until crispy. 

While fries are cooking, brown ground beef. Drain fat. Add diced onion and peppers, cook until browned. Add taco seasoning and water, mix according to package directions. 

Remove fries from oven when just under crispy and place in 9 x 13 inch baking dish. Layer taco mixture over fries. Sprinkle with cheese and jalapenos. Return to oven, cook until cheese is melted. Top with tomatoes and green onion. 

NOTES: We used an entire 2 lb bag of frozen fries, when the original recipe only called for 1 lb. It was just too much meat to cover all the fries. We also seasoned our plain fries with a little bit of Pappy's seasoning. You can see from our photo that our fries were not cooked on a cookie sheet. We transferred it to a baking dish once we went to add all the toppings. It would have been a huge mess without it. I've updated the instructions to say this.
