Quick Chicken Curry

Tyler has recently gotten interested in curry in all its forms. I saw this recipe and decided we should give it a shot, maybe expand my cooking horizons. It went pretty well and we will definitely make this recipe again. It really is such a quick meal to make.
  • 2 tsp extra virgin olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp curry powder
  • 1 14.5 oz can diced, fire-roasted tomatoes, drained
  • 3/4 cup Greek yogurt
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp cayenne pepper, optional
  • 1 1/2 cups cooked chicken, chopped
  • fresh parsley or cilantro, chopped for serving
Heat olive oil in a large skillet over medium heat. Add onion and saute for 4-5 minutes, until softened. Add garlic and saute another 30 seconds. 

Stir in curry powder, diced tomatoes, yogurt, and milk. Season with salt, pepper, and cayenne. Bring to a simmer and cook for 2-3 minutes, until slightly thickened. Stir in chicken until warmed through, 1-2 minutes. 

Serve hot with herbs.
