No-Bake Choco-Mallo-Cereal Treat Bars

These were such a hit. I made them for our Bible study class one Sunday and took the leftovers to work the next day. They kept well and were filling. Added bonus: no cooking involved! I love a breakfast recipe you don't have to get up at the crack of dawn to make.
  • 3 Tbsp butter or margarine
  • 1 bag (10.5 oz) miniature marshmallows
  • 6 cups Chocolate Toast Crunch cereal
Spray bottom and sides of 8 inch square or 13 by 9 inch pan with cooking spray. In a large microwaveable bowl, microwave butter and marshmallows uncovered on high about 2 minutes, stirring after each minute, until mixture is smooth. With pot holders, remove bowl from microwave. Immediately stir in cereal until evenly coated. 

Press cereal mixture evenly into pan using buttered back of spoon. Cool at least 10 minutes. Cut into 4 rows by 3 rows. Store loosely covered. 

NOTES: I made a double batch because I wasn't sure how many people would be at Bible study that morning. I pressed it all into a 9x13 inch pan and it fit well. They were thick and easy to handle while eating. I will say this, make sure you aren't timid with your pressing into the pan. There were plenty of bits of mine that weren't covered in marshmallow so I really had to push them together to get the big chunks to stay together.

Also, confession: I have never made rice krispie treats before so the whole melted marshmallow thing was a learning experience. All I can say is work fast. Once you've melted your butter and marshmallows, you better be ready to coat the cereal and get it in the pan before it cools. And it still gets all over your fingers. Since I was making a double batch, my bowl was a bit full. I think next time I will make 2 separate batches at the same time and pour them in the same pan.
