Beef Kebobs with Pineapple, Onion & Bell Pepper

Summertime = grilling time! Which also means less work for me because I make Doug do all the grilling! Yay! Anyway, this was another recipe from Doug's friends who eat all gluten-free. I have to say, it was very tasty. Not a ton of ingredients, nothing out of the ordinary, and made quickly. Perfect for a weeknight dinner.
  • 3/4 lb boneless top sirloin steak, cut into 1-inch cubes
  • 2 Tbsp soy sauce
  • 1/4 tsp garlic powder
  • 2 Tbsp olive oil, divided
  • 1 bell pepper cut into 1-inch pieces
  • 1/2 red onion, cut into small wedges
  • 1 cup cubed pineapple
  • salt and pepper to taste
Combine steak, soy sauce and garlic powder in a zip top freezer bag. Seal and refrigerate 15 minutes, turning once. Preheat grill or grill pan to medium-high heat. Remove beef from marinade; discard marinade. Combine 1 Tbsp oil, bell pepper and onion in a bowl, tossing well. Alternately thread beef, bell pepper, onion and pineapple onto skewers, sprinkle skewers with salt and pepper. Place skewers on grill rack rubbed with remaining oil. Grill 6 minutes per side or to desired doneness.
