Oven-Roasted Meatballs

This was really tasty. Tyler helped make the whole thing with Doug and they had a blast. Then again, part of that could be because they were making "balls" jokes the whole time. I figured, if they were in the kitchen having a good time and I didn't have to cook, they could have a little bathroom humor while they did it (as long as it stops when we get to the table. There's a $0.25 fine for each infraction of bad manners at our dinner table).

These were hearty and crunchy and flavorful....very good. And very easy to make. Most of the ingredients, we constantly have in our house. Except lemon rind. Who keeps one of those around? We just skipped it and it still tasted fine.
  • 1 lb lean ground beef
  • 1/2 medium onion, chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic salt
  • 1/2 tsp pepper
  • 1 large egg, lightly beaten
  • 1/2 cup chopped fresh parsley
  • 2 Tbsp extra virgin olive oil
  • 1 tsp grated lemon rind
  • 1 clove garlic, minced
Preheat oven to 400 degrees. Line a rimmed baking sheet with foil, set a wire cooling rack over foil. Combine beef, onion, oregano, thyme, garlic salt, pepper, and egg; shape mixture into 2 inch meatballs. Place meatballs on wire rack. Bake 20-25 minutes, or until meatballs are done. Stir together parsley, oil, lemon rind, and garlic in a small bowl; season to taste with salt and pepper. Sprinkler over meatballs.
