Cheese & Herb Potato Fans

These is a very pretty dish. As I've said before, I'm not very good at the presentation of my food, though it usually tastes decent. I'm trying to work on that and this was an attempt at that.

I also wanted to try this recipe since it seems like a nice change from a plain baked potato. The taste was great, though I think things can always use some more butter. I wish we had a little more time to cook them a bit longer. We were a bit pressed to get the nieces and nephew back home at a decent hour and cut the baking maybe 10 minutes short. The potatoes were a little on the harder side, but still tasty.
  • 8 medium potatoes
  • 1/2 cup butter, melted
  • 2 tsp salt
  • 1/2 tsp pepper
  • 2/3 cup shredded cheddar cheese
  • 1/3 cup shredded Parmesan cheese
  • 2 Tbsp minced fresh chives
  • 2 Tbsp minced fresh sage
  • 2 Tbsp minced fresh thyme

Preheat oven to 425 degrees. With a sharp knife, cut each potato into 1/8 inch slices, leaving slices attached at the bottom; fan potatoes slightly and place in a greased 13x9 inch baking dish. In a small bowl, mix butter, salt, and pepper; drizzle over potatoes.

Bake 50-55 minutes or until potatoes are tender. In a small bowl, toss cheese with herbs; sprinkle over potatoes. Bake about 5 minutes longer or until cheese is melted.

NOTES: Doug found that making the potatoes fan was a little difficult to figure out. He finally started twisting them a bit like you would to wring out a wet rag and that allowed the potatoes to stay fanned. Also, be sure the salt is completely mixed in to the melted butter. I started pouring the butter mixture over the potatoes and all the salt was in the bottom of the bowl. I ended up having to just sprinkle some salt over the potatoes.
