Peppermint Stripe Brownies

If you're like me, you might not know what a jelly roll pan is. Now, you know who Jelly Roll is...but that's not the same thing. :-) It is a 10x15 inch pan with a 1 inch lip around the edge. Sooooo a cookie sheet with a lip. Anyway, now you know!
  • 2 sticks butter, plus 5-6 Tbsp, divided
  • 1 cup sugar
  • 4 eggs
  • 1 bottle (16 oz) chocolate syrup
  • 1 cup plus 1 heaping Tbsp flour
  • 1/2 cup chopped walnuts, optional
  • 2 cups powdered sugar
  • 2 Tbsp cream
  • 1/2 tsp peppermint extract
  • 1 to 2 drops green food coloring
  • 12 oz chocolate chips
Preheat oven to 350 degrees. Cream 1/2 cup butter and sugar. Add eggs, followed by syrup, 1 cup flour, and nuts. Pour into a greased jelly roll pan and bake for 20-25 minutes. Let cool.

Mix powdered sugar, cream, 1/2 cup butter, peppermint extract, and food coloring together. Frost cooled brownies. Cover with plastic wrap and freeze about 15 minutes. 

Melt chocolate chips in microwave on high in 30 second increments, stirring after each time until smooth. Spread quickly over frozen brownies. Let chocolate set up, then cut into squares.
