Sooooo I coupon occasionally. Used to do it much more. We're talking those crazy people walking out paying 50 cents for a whole cart. Anyway, while I was doing that, I ended up with stockpiles of some items. One of those things was cake mix and I apparently don't make many cakes because I still have a ton left. What I'm trying to do now is use up some of these mixes before they go bad. Hence, this recipe!
This was such an easy recipe and got good reviews from all ages who tried it. Mine maybe doesn't look the prettiest, but it still tastes yummy.
- 1 package spice cake mix
- 3 large eggs, room temperature
- 1 cup canned pumpkin
- 1/2 cup water
- 1/2 cup canola oil
- 1 package (3.5 oz) instant vanilla pudding mix
- 1 tsp ground cinnamon
- 1/2 cup chopped pecans
- cream cheese frosting or whipped cream
Preheat oven to 350 degrees. Grease and flour a 10-inch fluted tube (bundt) pan. In a large bowl, combine the dry cake mix, eggs, pumpkin, water, oil, pudding mix, and cinnamon. Beat at medium speed for 5 minutes. Stir in pecans.
Pour into prepared pan. Bake until toothpick inserted in the center comes out clean, 45-55 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Frost cake or serve with whipped cream (I used my mom's homemade frosting recipe).
