I must say I'm impressed with most of the Instant Pot recipes we've done so far. I still don't know if all of them merit being made in the instant pot (instead of on the stove), but it's nice to be able to do so many things with one dish. Yay for less cleanup!
- 1 1/2 lb boneless skinless chicken breasts, cut into 1-inch pieces
- 1 Tbsp sesame oil
- 1/4 cup honey
- 1/4 cup soy sauce or gluten free tamari soy sauce
- 1/4 cup water
- 3 cloves garlic, minced
- 1/4 tsp crushed red pepper flakes
- 3 tsp cornstarch
- 2 Tbsp cold water
- 1 Tbsp sesame seeds
- hot cooked rice
- thinly sliced green onions, optional
Quick-release pressure. In a small bowl, mix cornstarch and water until smooth; stir into pressure cooker. Select sauté setting and adjust for low heat. Simmer, stirring constantly, until thickened, 1-2 minutes. Serve with rice. Sprinkle with sesame seeds and, if desired, green onions.
NOTES: We used drumsticks for this recipe because it's what we had. A little bit more work to get the meat off the bones at the beginning, but hey, we were being thrifty!
