You all know I love Baileys Irish Cream. I put it in my hot cocoa, my mint chocolate chip shakes and my pancakes. Naturally, when I was at the store and saw the special display for these baking chips, I HAD to try some. I wasn't really sure what I'd do with them, but thank goodness Baileys has that covered for me. I turned over the package and there was a recipe!
- 1/2 cup unsalted butter, room temperature
- 2/3 cup brown sugar, packed
- 1 1/4 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp kosher salt
- 12 ox bag Baileys baking chips
In a large mixing bowl, cream the butter and sugars together until thoroughly combined and the mixture becomes light and fluffy. Add the eggs, one at a time, and mix until completely incorporated. Add the vanilla.

Scoop out the cookie dough in about 2 Tbsp size scoops onto the baking sheet, 2 inches apart. Chill the scooped cookies in the refrigerator for 1 hour.
Bake chilled cookies at 375 for 10-12 minutes.
NOTES: Mine are not as fluffy looking as the ones on the package. I don't remember if I didn't have time to chill them long enough or if that's just how it goes? They still tasted good, but they were not as chewy as I'd like. I probably shouldn't have left them in that long since they were thinner than they should be.
Also, you could totally add some regular chocolate chips to the recipe, if you need more chocolate.

Prep Time: 15 minutes plus chilling
Total Time: 30 minutes plus chilling
