Chicken Caesar Wraps

I liked this one. I've had my share of Caesar chicken wraps at restaurants and they can be great and horrible and everything in between. I think a lot has to do with the ratio of dressing to chicken. I've had some dry wraps in my day. This one was just right. Only change I would make would be to include more lettuce. It just didn't seem like a lot. The wraps were pretty small with ordinary tortillas and even they could definitely could have held more romaine.
  • 3/4 cup reduced fat creamy Caesar salad dressing
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 3 cups cubed, cooked chicken breast
  • 2 cups torn romaine lettuce
  • 3/4 cup Caesar salad croutons, coarsely chopped
  • 6 whole wheat tortillas (8 inches), room temperature
In a large bowl, combine the dressing, cheese, garlic powder, and pepper. Add the chicken, romaine and croutons. Spoon 2/3 cup chicken mixture down the center of each tortilla, roll up. 

Serves 6
