Chicken Salad Croissants

I thought these were pretty good. Doug and Tyler weren't huge fans, but I think part of that was because my pieces of chicken and cheese were too big. How in the world to you "cube" a chicken? That's what the original instructions say to do. I tried to cut them in what I thought would be bite-size pieces. They were still too big. But tasted good!
  • 2/3 cup mayonnaise
  • 1/2 cup dill pickle relish
  • 1 Tbsp minced fresh parsley
  • 1 tsp lemon juice
  • 1/2 tsp seasoned salt
  • 1/8 tsp pepper
  • 2 cups cooked chicken, cut into bite-size pieces
  • 1 cup Swiss cheese, cut into bite-size pieces
  • 6 croissants, split
  • lettuce leaves
Mix first six ingredients; stir in chicken and cheese. Serve on croissants lined with lettuce. 

NOTES: With my bigger pieces of chicken and cheese, these sandwiches became a little messy. The pieces wouldn't stay inside the sandwich like they would if it was shredded chicken. I think you could probably do better shredding the cooked chicken, rather than "cubing" it.
