Weight Watcher's BLT Pasta Salad

This was an interesting idea. I don't know if it was executed very well. I think it's something that you have to eat right away, otherwise, the lettuce gets wilty and not pleasant looking. It didn't taste bad, but it was a large recipe for just our small family of 3.

  • 3 2/3 cup large macaroni shells pasta, cooked, drain well
  • 4 cups tomatoes, diced
  • 4 slices of bacon, cooked and crumbled
  • 3 cups lettuce, thinly sliced
  • 1 tsp sugar
  • 2 tsp cider vinegar
  • 1/2 cup fat free mayonnaise
  • 1/3 cup light sour cream
  • 1 Tbsp Dijon mustard
  • salt and pepper to taste
In a large bowl, mix pasta, bacon, tomatoes and lettuce. In a small bowl, mix remaining ingredients. Pour small bowl ingredients into large bowl; toss to combine.

NOTES: I cheated and used a can of diced tomatoes. I didn't want to spend all that time chopping them. If you do this, just make
sure you drain them really really well. You don't want any extra moisture in this recipe.

Serves 8


Prep Time: 20 minutes (including cooking pasta and bacon)
Total Time: 30 minutes
