Triple Layer Peanut Butter Brownies

Absolutely sinful. You couldn't eat more than one of these brownies at a time even if you really wanted to. I didn't even mind the peanut chunks on the top, and I usually hate nuts in my food. The brownies were a tad messy because the top layers would sometimes slide off the brownie layer, but they still tasted amazing. And one box of brownie mix can go pretty far because you will be able to cut each serving piece very small. 
  • 1 pkg (19-21 oz) brownie mix (13x9 pan size) and all necessary ingredients (egg, oil)
  • 1 cup cold milk
  • 1 pkg (3.4 oz) vanilla flavor instant pudding
  • 1 cup creamy peanut butter
  • 1 2/ cup powdered sugar
  • 1 1/2 cup cool whip (do not thaw)
  • 3 oz Baker's Semi-Sweet chocolate
  • 1/2 cup dry roasted peanuts, coarsely chopped
Prepare and bake brownies in 13x9 inch pan as directed on package, cool. Meanwhile beat milk and pudding mix with whisk 2 minutes. Add peanut butter and sugar, mix well. Refrigerate until brownies are completely cooled. Spread over brownies.

Microwave cool whip and chocolate on high 1 minute, stirring every 30 seconds. Spread over pudding, top with nuts. Refrigerate 1 hour. 

NOTES: The pudding looked funny. I used only the 1 cup asked for and it was super lumpy. I added probably another whole cup of milk to make it smoother, but I think this is what made the tops slip off the brownies. Still tasted great. 

Also, my chocolate and cool whip did not melt in 1 minute's time. I had to heat mine quite a bit to get it spreadable. My cool whip melted pretty quickly so maybe heat the chocolate for a full minute and then add the cool whip and heat again?
