Artichoke Bruschetta


So this isn't really a meal, per se, more like a side dish or appetizer. I really like artichoke and have been trying to do more recipes with them. I can safely say this was a success! We all stuffed as many of these in our tummies as we could (on top of our regular dinner) and there were only a few left over when we were through. We even added a small chopped up tomato to the mix and Tyler loved it (he hates tomato. And mayonnaise. And onions. And pickles....). I think I would have preferred it without the tomato, but it was still really good.
  • 1 jar (6.5 oz) marinated artichoke hearts, drained and chopped
  • 1/2 cup grated Romano cheese
  • 1/3 cup finely chopped red onion
  • 5 Tbsp mayonnaise
  • 1 small tomato, diced (optional)
  • 1 French baguette cut into 1/3 inch slices
Preheat broiler (we just put our oven on the hottest heat). In a medium bowl, mix the marinated artichoke hearts, Romano cheese, red onion and mayonnaise. Top the French baguette slices with equal amounts of the mixture. Arrange slices in a single layer on a large baking sheet. Broil in the oven 2 minutes, or until the toppings are bubbly and lightly browned.
